Veganize Your July 4th | Four Recipes To Get Started

Have you been trying to go more plant based this summer? Does the fear of “missing out” during the holidays creep up? Listen friends, you do not have to miss out! There are so many plant based options to replace all the food you used to eat or are recently trying to stay away from. And here’s a secret… your summer fitness goals are that much closer on a plant based diet. You’ll be eating burgers all while getting more toned, have a flat belly, feel full and satisfied, all without feeling constipated, sluggish, and heavy throughout the summer. Here are four recipes to help you keep your July 4th fully plant based, easy, accessible, and DELICIOUS.

Okay, let’s get started! Here are the four recipes to get those creative juices flowing on what you can make this week. Hey, maybe if you’re not fully plant based and you are working towards a plant based diet, bring one of these dishes to the party and don’t mention its vegan. Wait until everyone tries it and loves it;) I’m a total give away now a days that anything I bring is vegan so I don’t get to play around like this anymore. At the beginning, it was fun to see people rave about something that was fully vegan and have no idea. Sometimes mentioning it beforehand gives people the opportunity to create a judgement that they already don’t like it. My family does this from time to time and literally every time, we hear “wow this is so delicious” or “this is really good, how did you make this”. rice crispy treats

Ingredients:

5 cups of Crisp Rice cereal (I use Trader Joe’s brand so theres not additives/HFCS)
10 oz bag a marshmallows (check for gelatin)
1/4 cup vegan butter
1/2 tsp vanilla extract

Directions

  1. Begin by lining a 9x13 inch baking sheet with parchment paper (if you spray the pan, that works too)

  2. In a pot, start melting the butter on low medium heat.

  3. Once melted, add in the marshmallows and stir immediately. Keep stirring vigorously.

  4. If it feels like they aren’t melting fast, they will, just keep stirring. Once fully melted, add in the vanilla extract.

  5. Start adding in the cereal until everything is stirred in evenly.

  6. Transfer to the baking sheet, put in the fridge for just a couple minutes, cut and ENJOY!


BUFFALO CAULIFLOWER

Ingredients:

1-2 heads of cauliflower
1 cup gluten free flour (tapioca starch works too)
1 cup water
1/2 tsp garlic powder
1/4 cup vegan butter
1/4 cup hot sauce

Directions

  1. Preheat oven 350 degrees. Cut up cauliflower into florets and rinse well.

  2. Mix together the flour, water, and garlic powder well and dip and roll all of the wet cauliflower then place on a greased baking sheet.

  3. Bake for 18-20 minutes.

  4. Mix together the melted vegan butter and hot sauce. Add in the cauliflower and toss until each piece is covered.

  5. Bake for another 15 minutes, dip into some Daiya ranch and ENJOY!


mac and cheese

Ingredients:

1 box Banza pasta
1 bag Daiya cheese
1 can full fat coconut milk
1/3 cup nutritional yeast
pinch Himalayan sea salt

Directions

  1. Start by boiling the pasta per box instructions. Once your timer is set for the pasta, begin the cheese sauce.

  2. Bring coconut milk to a boil, stirring consistently so it does not burn.

  3. Add in nutritional yeast, continue stirring. Reduce heat to a medium setting.

  4. Add in full bag of cheese, stirring vigorously until completely melted. I like to test it out with a tortilla chip:)

  5. Once pasta is cooked, drain, and rinse with cold water. Place in a new pan.

  6. Pour cheese sauce over pasta and mix together. (I set a cup of the cheese sauce aside to pair with chips and salsa). Sprinkle with sea salt and ENJOY!

Beyond Meat burgers

Ingredients:

Beyond Meat Patties
Optional:
Your favorite burger toppings
(mine are mustard, tomato, lettuce, onion, and lots of pickles)
Gluten-free buns or lettuce wraps
Chao vegan cheese

Directions

  1. You can pan fry or grill the burgers, just as you would a beef burger. I like to add coconut oil to the pan first, let the heat slightly build before placing the burger in the pan. Allow each side to brown, place cheese on patty then cover with a lid until it melts. Add your favorite toppings and ENJOY!
