Chickpea Masala for the absolute win! I loving cooking but honestly haven’t had a ton of time to lately. I love sharing easy recipes with you because I know you’re running around like crazy too all while trying to stay healthy. Amen?! This dish is SIMPLE and packed full of FLAVOR. This is ideal for meal prepping too, just pack the rice and curry separate so the rice doesn’t absorb all the liquid.
1 tsp olive oil
1 tsp garlic
24oz passata tomato purée
1 tsp @frontiercoop masala seasoning
1 tsp of red curry paste
2 cans garbanzo beans (chickpeas)
1 can full fat coconut milk
Pour over rice
1. Sauté garlic and onion
2. Add in passata, masala seasoning, curry paste, chickpeas, coconut milk, and fresh cilantro
3. Simmer for 5-10 minute, add fresh cilantro, and pour over rice.
