BBQ Jackfruit Tacos | Sriracha Dressing

Happy Taco Tuesday, vegan style! I think I made some Pinterest worthy tacos here, guys. These are husband approved and have been a staple for us the last couple weeks. This recipe is simple and packed full of flavor. Jackfruit is an awesome meat alternative especially compared to the processed mock meats you can find in stores. Jackfruit is an exotic fruit that has a gummy texture mimicking meat with a slightly sweet taste. I personally do not like my '“normal food” to be sweet so I was skeptical of jackfruit as a meat replacement but I LOVE it. The sweetness is very subtle. Theres nothing like ripping a jackfruit a part and eating it fresh so if you get the chance, give it a try! Trader Joe’s has the canned version that I used for this recipe that makes it more accessible and affordable. TJ’s always come through! Check out the recipe below and let me know what you think!

Ingredients:

Taco base

2-4 cans plain jackfruit
BBQ sauce (no high fructose corn syrup!!)
1/2 onion
Corn tortillas

Toppings

French cilantro
Cabbage

Sriracha Dressing

1/2 lime
4 Tbsp tahini sauce
1 Tsp sriracha sauce
8 Tsp of water
Himalayan sea salt to taste

Directions

  1. Begin by draining the jackfruit, pull apart the pieces with your hands, add into a crock pot.

  2. Chop up onion and add to pot followed by your favorite bottle of BBQ sauce.

  3. You can put the crock pot on low if you want to cook it the whole day or put it on high and let sit for around two hours. (Also can be done on the stovetop if you want to make this meal quick)

  4. Chop up cabbage and cilantro. (Jalapeno and avocado are great topping additions)

  5. Blend all ingredients for the dressing. (I use a Magic Bullet for this)

  6. Place tortillas on a baking sheet and put on high broil for 5 minutes.

  7. Add jackfruit into tortillas, sprinkle on toppings, and drizzle the sriracha dressing on top. ENJOY!
